There's... Not a lot to figure out there. Science has plenty examples of multiple people independently discovering the same things. I wouldn't be surprised to find out noodles were one of them.
Those words, in English, are not derived from any Asian language. "Noodle" is derived from a German word describing dough that's been cut into strips and dried. "Dumpling" is entirely English and refers to soft dough that's been cooked by boiling it.
