My favorite single-seater spaceship. However, I am not an engineer, nor do I think Earth companies would be able to build replacement parts, nor would I be able to afford them if I could.

I think I would go with a Starfleet shuttle as @bintananth did. Built for dummies. It has an advanced AI that can self diagnose any problems, a replicator that can build replacement parts and tools, and the AI can explain what I need to do to fix the ship. I don't need to be a trained pilot to fly it. The shuttle will pretty much never run out of power. Also comes with sensors, shields, phasers, a transporter, and highly advanced medicine. The shuttle is also big enough that I can carry some cargo and other people. I will also never run out of food.
I don't think that those ST shuttles/runabouts have full A.I. that can self-repair or instruct you to repair everything, and you might still need to harvest materials for the replicators.
For some rare stuff like dilithium you might even have to hop to another star system altogether.
Maybe a Borg sphere/cube would be a better choice, since you'd theoretically have the ability to control all Borg tech and drones in a given area.Wink-wink, nudge-nudge.

There's a worrying lack of certainty in that statement, considering it goes with the possibility of there being Borg in the area.

As for ships. I'd go with Talyn from Farscape. Self-maintaining, direct neural interface, decent speed and armament, and a collection of small craft that can be regrown.

There's also the possibility of getting into the wackiness that is Farscape tech. It's not even later Trek style ultra tech, or possessed of noteable biggatons, it's just weird. Like a DnD wizard got drunk and decided to try his hand at this technology thing. Random brainswaps, translation microbes, instant cloning guns. The fact that crystalisation weapons that let you shatter and reassemble someone are one of the least ridicululous plot device of the week is saying something.

Talyn crossed my mind, yeah.
Problem was, that in the series he was rather willful and disobedient, so I'd rather have the Andromeda.

No, the PKs had prepared to inseminate her, but that one tech Aeryn bonked then betrayed to get back to flying knockoff X-Wings had installed something to prevent the modified genrtic material from reaching the maturation chamber.Crichton broke it.

Can't miss with the classics I suppose, although if it was fully capable of running with just one person piloting it was sort of left out for debate, IIRC.

Look at what happened with the Achuultani. For some reason the Third Empire didn’t want their warships capable of mutinying. Dahak’s sentience was a fluke and one not even he wanted to replicate.

That is why played it safe and chose Andromeda.

Nice custom wood interior, cushioned seats, lounge area with a gaming room, refrigeration coolers, conference room and office area, entertainment center, medical bay, and of course a spacious cargo bay. And added onto living the life of luxury I so richly deserve, it also has a full sensor arrays, precision flight controls, shields, hardened armor plating that can offer stealth capabilities, next generation navigation plus a humble weapons loadout consisting of heavy laser cannons and concussion missile launchers.

I almost switched sides when I saw this vehicle. Which is odd because I was a Sith Inquisitor class.

Fly and maintain.
The Andromeda and Dahak were extremely good at self-repair.
Flying the ship would probably be far simpler and more straightforward than fixing it.

Honestly, I'd want one that doesn't need any more maintainence or fussyness than the typical y2k-ish car: which come with owners manuals telling you what to do for things like disabling the anti-theft system when jump-starting one or replacing the battery.

With mine it's a simple matter of using the remote to unlock the driver's side door. Without the remote that car probably ain't going anywhere under its own power after the battery dies.

Assuming it comes with the Bentusi aboard it's probably about as benevolent an ancient precursor as you'll ever find and will actively work to uplift civilization as long as you avoid the stuff like genocide and slavery that tend to irritate them. If you get to replace the Bentusi well, you're Bentus now and that's hard to beat. Galaxy-spanning FTL, real space STL barely below C, a hull tougher than a moon, beam weaponry for days, some kind of teleportation trading system, and it's extremely hard to find anything that can out-manufacture any Homeworld ships much less the Great Harbor Ship.

Also while scaling in Homeworld is never easy, it's most likely bigger than the Death Star and if not at the very least can fit a Borg Cube in some of its smaller hangar bays.

Per the OP the crew is nothing but you. You don't get the crew it's supposed to come with - so no Bentusi - and that one's out as a realistic possibility per the OP.
