I think mobile browsers default to not displaying signatures at all as a bandwidth-saving measure(?)--disabling it would probably be more involved than a button and be something to be adjusted on your phone not the forum.
...I think? Maybe? Possibly? I am not a programmer and have no knowledge. Perhaps @40thousandninjas knows (this is partially an excuse to ping someone and make sure it works similarly as on SB--which it seems to)?

It's mostly for a UI experience to avoid cluttering up the display. A few dozen bytes of text per post is basically negligible. If you want to see signs on mobile, there may be a setting but at the very least you can request the desktop site from your mobile web browser.
