Well, if you think about it, it makes a kind of sense that they would have both sets of sex organs so they could mate with either sex. ;)
 
One thing I'd like to see in the reboot is for Jack to be a romance option regardless of player gender, which was how she was originally written. The game devs were forced to cut that by the producers for political reasons.

Frankly, I'd rather they not do that. Jack is already an obnoxious edgy pile of clichés, the fact that she's straight is pretty much the only thing that keeps her from being an outright parody of that sort of edgy deviants OC character archetype.
 
I think it makes sense given Jack's backstory. She'll basically have casual sex with pretty much anyone because it's fun, an actual relationship for her isn't about gender, it's about trust. Given how few people she's *ever* been able to trust, I can see her pretty aggressively latching onto anyone who actually proves themselves trustworthy, even if the relationship ends up being transitory and part of her healing process.

Jack isn't edgy, she's really messed up.
 
No, She's absolutely edgy. She's messed up as well, but the edgy stuff is more prominent. And more annoying.

I find characters who are edgy for the sake of being edgy are annoying as hell, characters that are psychologically messed up are legit interesting when the story does a decent job of actually exploring it. I think ME2 cleared that bar nicely with Jack, especially seeing how much she manages to grow by ME3.

(Note how much less edgegirl ME3 Jack is, and she's downright adorably protective of "her" kids.)
 
ME3 rescued her from the scrappy heap somewhat but ME2 Jack was a mess.

ME3 "rescues" Jack by basically making her a completely different person, sharing only a character model with ME2 Jack, and then trying very hard to bring up as little of Jack's past as they can get away with.

And frankly, Jack in ME3 is still not something I like, because it's such a painfully contrived way to cram her into the story, and an implausible one at that. There is no way Jack would ever get hired to work with children, let alone with biotics after the BAaT fiasco. They could have worked her into the story anywhere else, but decided "hey, Jack's biotic, so she'll do a thing with these other biotics, because biotics", nevermind the utter implausibly of that concept.
 
I guess I just find her beautiful. I know there are plenty of people who find bald or very shortly cropped hair on women to be unattractive, but I find that it can really work for a lot of women. I'm kind of the same way about tattoos, and in Jack's case especially since at least some of it seems to be to help hide or blend all the surgical scars in. There are some cases where I don't much care for it - as an example, there is a rather attractive Suicide Girl who went by the name Essence, and she had a rather nice mid-riff, which she ended up covering up with a giant skull. Kind of killed my attraction for her, to be honest, as that was one of my favorite parts of her. Anyway, while most people were put off by the fact that she's basically bald and covered with tattoos, I found her to be attractive and was kind of disappointed that they had her grow her hair out and cover up more in ME3. For me it was only really ridiculous that they had her at times in a zero-atmosphere environment in her usual "outfit" with just a mask to breathe, but basically all the other characters were treated the same way and that comes down to how the game did things. I'm going to gush a bit more about the first game, but one of the things I liked about it was that the characters would change outfits as appropriate, with being dressed more casually on the ship, but armoring up when going on a mission, or having helmets in zero-atmosphere or toxic atmospheres. It kind of struck me as ridiculous that the later games never had that flexibility, especially as in the first game, the armor would look different depending on what you equipped the characters with.
 
Don't really get the appeal, tbh. Bald and covered in tattoos just screams unresolved issues.

It's unclear whether the baldness was actually her choice. She was in cryo, and notice that her head tattoo is *very* different from the ones on her body which are color -- the head one looks like an elaborate product barcode.
 
IIRC, she mentions the haircut is actually from some cult she was part of for a while, and that she just kept the haircut.
 
Legendary edition is not stated to include better controls, better stories, Jack swinging both ways, or space boobs.
Eurogamer has info on ME1 game changes:
Gameplay changes to ME2 and ME3 sound relatively minimal, though there's a whole list of differences to remove "friction" from ME1. Aim assist adds adhesion to keep you locked onto enemies, while a "zoom snap" will flick your focus onto a target when aiming. Each ME1 gun has been balanced and given an individual feel similar to those found in later games. The Mako has been given a speed boost and updated physics, while the game's hidden loading screens in lifts have been drastically cut down in length.

A list of other ME1 improvements mentions enemy and squad AI changes, the removal of class-based weapon restrictions (though only some allow for training to higher levels), an XP rebalance so you can hit the game's cap without New Game Plus, more consistent autosave points, boss encounter improvements, reduced cooldown for first aid, a reduction in mini-games, and a modernised HUD.
 
Being able to fully level in a single playthrough makes a lot of sense for "first game in a franchise" as opposed to "new standalone game not leading a franchise yet".

Also, removing class-based weapon restrictions makes sense for ME1 considering your player character literally carried all the weapons at all times. It made no sense for Shepard, a skilled special forces operative, to lug around weapons she could not ever use effectively.
