Cool as that would've been, it would be a difficult sell to the normies. I mean, a Hutt can move fast if they want to, and with Sith Powers prolly even faster, but they are still bug fat slugs with short arms.

Indeed. And the Hutt can be portrayed as fast. Snakes manage to look menacing by slithering really fast. They are just too lazy and arrogant to do so.

Those were my thoughts. If you want to take the Hutts in a different direction than in canon (or even in legends,) you could even justify it: just have Jabba be an obese Hutt. He's a crime lord, but he's upper management.
Sure, he needs to set an example every now and then, but he's more concerned with ruling his criminal empire than anything else. He has henchmen and bounty hunters to do the dirty and physical work for him. Not out of the question he'd gain a ton or two. Regular Hutts can be much leaner and snake-like.

I think there was at least one hutt from the EU that decided to get swole. I can't remember its name though.
Grakkus Jahibakti Tingi. That's his name. Unfortunately he's from Disney-canon, but nothing should stop us from pilfering the good bits out of that mess and adding them to our own.
The EU already did that, and it pretty much sucked.
Grakkus was merely a crimelord with a taste for collecting Jedi artifacts. The Hutt Jedi who fell to the Dark Side was Beldorion.

Take the concept of Grakkus, keep those cool centipede-robot legs he has, keep him fit, give him Force powers, and add some Hutt battle armour to cover most of his body. It would actually look terrifying.

Beldorion was explicitly described as sleek and muscular when he was a Jedi; his strength had greatly decayed by the time Leia faced him, although he was still vastly less fat and more physically capable than any "normal" Hutt. This is directly illustrated in the drawing of him that's posted in his Wookiepeedia page, which is official material taken from the Essential Chronology.
